A while back we found out that Ryan Burnet was going to open a new healthy-eating concept in the former People's Organic spot in Wayzata. That neighborhood is so HOT right now, what with Gavin Kaysen redoing Blue Point, and Billy Tserenbat of Sushi Fix promising California fresh eats at the coming Baja Haus. While some of us in the 'hood already knew the name, Burnet has formally announced that his salad shop will be Crisp & Green.
And also? He's already got a second spot, in the North Loop. Crisp & Green will open in the former Sapor space at 5th and Washington Avenue. For those keeping track, the space was once pegged to be the home for Brut, Jamie Malone and Erik Anderson's chicken and bubbles joint, but word is that they have parted ways with the landlord and space.
Crisp & Green will be the first fast casual healthy-eating-focused spot in the neighborhood, though Be'Wiched has been cranking fast-casual down the block for years (right next to Burnet's Bar La Grassa). For both C&G locations, chef Bill Fairbanks has created a menu of soups, salads, and grain bowls made with high-quality and organic ingredients, and there will be smoothies, local kombucha on tap, and fresh fruit frescas to grab.
Maybe more significant for the parking challenged North Loop neighborhood is the app that will allow you to custom order, pay, and schedule a fast pickup so you don't have to wait in line. Hopefully they'll have some dedicated parking spots for that quick-get situation.
Wayzata is already under lots of construction, and North Loop should be ready by the spring of 2017. This was always meant to be a vehicle for multi-unit expansion, so expect more locations to pop up next year. Salad for all!
