Crisp & Green is a fast casual salad, bowl and smoothie restaurant set for a grand opening Saturday, with plenty of food and fitness giveaways to kick it all off.

The restaurant, founded in Minneapolis, is opening locations throughout the Midwest, and is opening its first location in Sioux Falls this weekend at 2101 W 41st St. in unit 51 around the corner from Scheels. Crisp & Green will offer both indoor and outdoor dining, with enough seating for as many as 100 people.

And it was on purpose that Crisp & Green was the first of its kind to open here.

"Sioux Falls really doesn't have anything quite like this chef-inspired, made-from-scratch salads and green bowls. It's all clean food and you'll stay full," Paul Goldammer, franchise owner said. "People maybe made poor food choices during the pandemic because there just wasn't a lot of options."

"I'm from Sioux Falls. I spent ten years in the Minneapolis Twin Cities market. I was introduced to Crisp & Green by my wife's family, got interested in it (coming here)," Goldammer said. "It's all clean food and you'll stay full."

The company hired 35 people to staff the restaurant, which expects to see a good combination of walk-in diners as well as orders from area offices. Either way, it expects to have huge lines at opening.

Salads, smoothies and agua frescas are available at Crisp and Green in Sioux Falls.

After getting in line, customers can order from the chef-recommended menu for salads, grain bowls, smoothies, fresh juice and tea as well as kid's meals. The team can easily cater to a variety of diets, everything from Paleo to vegetarian to Keto.

Signature salads range from $10.75 and up, and grain bowls are a bit more.

"It's all seasons-based, and we try to source local," Shane Quail, the operations director, said. He noted that with each season, there's a change in the menu to bring customers back.

In addition, CEO Steele Smiley wanted to get the restaurant back to his hometown before opening in places like Omaha, Tampa or Denver. The push is to partner with local fitness companies to offer a workout and food option that's easy for busy people.
